During a guided visit of the Sitges Malvasia Interpretation Centre (CIM), located in the Sant Joan Baptista Hospital winery, you will discover all the secrets of the production of this wine that is so deeply rooted in Sitges' winemaking tradition as well as the full history behind it.

The Sant Joan Baptista Hospital winery has preserved the historical legacy that Malvasia has embodied in Sitges over the years, starting from the arrival of phylloxera and the appearance of champagne in the last quarter of the 19th century, which marked the beginning of its decline.

In view of this situation and to prevent Malvasia from disappearing, Manel Llopis i de Casades, a native of Sitges and heir to the Casa Llopis, the town's present-day Romanticism Museum, bequeathed the winery a vineyard located in Aiguadolç along with the family's Malvasia production business.
